  2. Add 1 pound shrimp (peeled and deveined) and toss gently to coat.
  3. Marinate for 5 minutes.
  4. Lightly coat a large nonstick skillet with cooking spray and heat over medium-high heat.
  5. Add 1/2 cup sliced bell pepper (any color) and cook for 1 minute, until slightly softened.
  6. Add the marinated shrimp and all but 1 tablespoon of the marinade to the skillet.
  7. Cook for 2 minutes, or until the shrimp turn pink on the bottom.
  8. Flip the shrimp and cook for 1-2 minutes more, until opaque and cooked through.
  9. In a small bowl, whisk together 1 tablespoon cornstarch and the reserved 1 tablespoon of marinade until smooth.
  10. Push the shrimp to one side of the pan. Stir the cornstarch mixture into the sauce in the center of the pan.
  11. Cook for 1 minute, or until the sauce has thickened slightly.
  12. Gently toss the shrimp with the thickened sauce and serve immediately. Garnish with fresh parsley or cilantro, if desired.
