How to Make Millet Patties
- Rinse 3/4 cup of raw millet under cold water.
- Cook millet according to package directions or in a rice cooker until fluffy (approximately 20-25 minutes). Set aside to cool completely. You should have approximately 3 1/2 cups of cooked millet.
- While the millet is cooling, prepare your vegetables. Roughly chop 1 cup of carrots, 1 cup of zucchini, 1/2 cup of red onion, and 1/2 cup of bell peppers. Add these to a food processor and pulse until finely chopped, but not pureed.
- In a large bowl, combine the cooked millet, chopped vegetables, 1/2 cup breadcrumbs, 1 large egg, 1 tablespoon of soy sauce (or tamari), 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of black pepper, and 1/4 cup chopped fresh cilantro (optional). Mix well to combine.
- Gently form the mixture into 8-10 patties. Place 1/2 cup of breadcrumbs on a plate. Press each patty into the breadcrumbs to coat both sides.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Arrange the patties on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Serve immediately with your favorite cashew gravy (recipe below).
