How to Make Salmon Fettuccine

  1. Preheat oven to 400°F (200°C).
  2. Place the salmon fillets on a sheet of parchment paper. Top each fillet with 1/8 cup of the thinly sliced red onion.
  3. Fold the parchment paper over to create a sealed parcel.
  4. Place the parcels on a baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Remove from oven and let cool slightly. Discard the red onion and flake the salmon into large pieces.
  6. Set the flaked salmon aside.
  7. While the salmon bakes, cook the fettuccine according to package directions in a large pot of boiling salted water. Drain and set aside.
  8. In a small bowl, whisk together the lemon juice, honey, Dijon mustard, and olive oil.
  9. Add the cooked fettuccine to a large bowl and pour the lemon-honey dressing over it. Toss to coat evenly.
  10. Gently fold in the flaked salmon.
  11. Serve immediately, garnished with fresh chives and a sprinkle of salt and pepper to taste.
