How to Make Shrimp Cheesy Grits

  1. In a saucepan, melt butter over medium heat. Add milk and season with 1 teaspoon salt and 1/2 teaspoon white pepper.
  2. Bring to a boil. Slowly whisk in grits, stirring constantly.
  3. Reduce heat to low, cover, and cook for about 20-25 minutes, or until grits are tender and creamy, stirring occasionally to prevent sticking. Add water if mixture becomes too thick.
  4. Remove from heat and stir in the cheddar cheese until melted and smooth.
  5. Season with additional salt and pepper to taste. Keep warm.
  6. In a large skillet, heat olive oil over medium heat. Add Andouille sausage and cook for 2 minutes per side, until browned.
  7. Add minced garlic and sauté for 30 seconds until fragrant.
  8. Season shrimp with salt and black pepper.
  9. Add shrimp to the skillet and cook for 2 minutes per side, until pink and cooked through.
  10. Remove skillet from heat and add sherry. Return to heat and carefully ignite the sherry (use caution!). Gently swirl the pan until the flames subside.
  11. Stir in shrimp stock and bring to a simmer. Reduce heat and swirl in 2 tablespoons of butter until melted and creamy.
  12. Return shrimp to the sauce and simmer for 2 minutes.
  13. Remove from heat and stir in 2 tablespoons of fresh parsley.
  14. To serve, spoon grits into bowls. Top with shrimp mixture and garnish with extra parsley (optional).
