How to Make Spaghetti With Prawns And Rocket

  1. Bring a large pot of salted water to a boil. Add 300g spaghetti and cook according to package directions until al dente.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add 2 cloves of minced garlic and 1/2 a red chili, finely chopped (remove seeds for less heat). Sauté for 1-2 minutes, until fragrant.
  3. Add 200g raw prawns to the pan and sauté for 2-3 minutes per side, until pink and cooked through.
  4. Pour in 100ml dry white wine and 1 tablespoon of tomato purée. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to slightly reduce.
  5. Drain the cooked spaghetti, reserving about 1/2 cup of pasta water. Add the spaghetti to the pan with the prawns and sauce. Toss to combine. If the sauce is too thick, add a little pasta water to loosen it.
  6. Stir in the juice of 1 lemon and half of a 50g bag of rocket. Season generously with salt and freshly ground black pepper.
  7. Divide the spaghetti among 4 plates. Garnish with the remaining rocket and a sprinkle of grated lemon zest.
