How to Make Spinach Beef Spaghetti Pie
- Preheat oven to 350°F (175°C).
- Cook 1 pound spaghetti according to package directions until al dente. Drain well and set aside.
- In a large bowl, whisk together 2 large eggs and 1/2 cup grated Parmesan cheese. Add the cooked spaghetti and gently mix.
- Grease a 9-inch deep-dish pie plate. Press the spaghetti mixture into the bottom and up the sides of the pie plate, forming a crust.
- Bake for 10 minutes.
- Meanwhile, in a large skillet, brown 1 pound ground beef over medium-high heat. Drain off any excess grease.
- Add 1/2 cup chopped onion and 1/2 cup chopped green bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in 1 (24-ounce) jar of your favorite spaghetti sauce, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and salt and pepper to taste.
- Bring to a simmer, reduce heat, and cook for 10 minutes, stirring occasionally.
- While the sauce simmers, place 4 ounces cream cheese between two sheets of waxed paper and roll out to a 7-inch circle.
- Carefully place the cream cheese circle on top of the partially baked spaghetti crust.
- Spread the cooked beef and vegetable sauce evenly over the cream cheese layer.
- Top with 5 ounces fresh spinach (about 2 cups packed), and 1 cup shredded mozzarella cheese.
- Bake for 20-30 minutes, or until the cheese is melted, bubbly, and the filling is heated through. Let cool slightly before serving.
