How to Make Steak Pie With Guinness

  1. Preheat oven to 160°C (325°F).
  2. In a bowl, combine 2 tablespoons all-purpose flour, 1 teaspoon Dijon mustard, and 1/2 teaspoon black pepper. Coat 1.5 lbs beef stew meat in the flour mixture.
  3. Heat 2 tablespoons vegetable oil in a large, heavy-based frying pan over medium-high heat.
  4. Fry one-third of the beef for 3-4 minutes per side, until browned. Transfer to an oven-safe dish. Repeat with the remaining beef in two more batches.
  5. Add 1 tablespoon oil to the pan. Add 1 large onion, chopped, and cook for 5 minutes, until softened.
  6. Add 2 cloves garlic, minced, and cook for 2 minutes until fragrant.
  7. Pour in 1 pint (500ml) Guinness, 2 tablespoons Worcestershire sauce, 2 bay leaves, 1 teaspoon fresh thyme, and 1 teaspoon brown sugar. Bring to a simmer and cook for 2-3 minutes.
  8. Pour the Guinness mixture over the beef in the oven-safe dish. Cover and cook in the preheated oven for 2 hours.
  9. Remove from the oven and increase the temperature to 190°C (375°F).
  10. In the same frying pan, fry 8 oz cremini mushrooms, sliced, in the remaining oil until browned.
  11. Stir the mushrooms into the beef mixture.
  12. Transfer the beef and mushroom mixture to a 15x20cm pie dish.
  13. For the pastry crust:
  14. Sift together 2 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Add 1 teaspoon fresh thyme and black pepper to taste.
  15. Stir in 1/2 cup beef suet. Gradually add 10-12 tablespoons cold water, mixing until a soft dough forms.
  16. Roll out the dough on a lightly floured surface. Dampen the edges of the pie dish and cover with the pastry.
  17. Trim and crimp the edges. Cut a small slit in the center to allow steam to escape.
  18. Bake for 30-40 minutes, or until the pastry is golden brown and the filling is bubbling.
