How to Make Sumptuous Gilroy Spareribs

  1. Preheat oven to 350°F (175°C).
  2. Place 3 lbs spareribs in a large, oven-safe baking pan with a lid.
  3. Halve 8 cloves of peeled garlic and sprinkle evenly over the ribs.
  4. Cover the pan tightly and bake for 1 hour.
  5. While the ribs bake, prepare the sauce: In a medium saucepan, melt 4 tablespoons of butter over medium heat. Add 1 medium onion, chopped, and 8 cloves of minced garlic. Sauté until onions are translucent, about 5 minutes.
  6. Stir in 1 cup ketchup, 1/2 cup brown sugar, 1/4 cup apple cider vinegar, 2 tablespoons Worcestershire sauce, 1 tablespoon soy sauce, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon black pepper, and 1/4 cup water.
  7. Bring the sauce to a simmer and cook for 45 minutes, stirring occasionally.
  8. After the initial 1-hour bake, remove the ribs from the oven. Pour off any excess grease from the baking pan.
  9. Pour the sauce over the ribs. Cover and return to the oven. Bake for 1 hour and 30 minutes, basting every 30 minutes.
  10. Check for tenderness with a fork. If ribs are not tender, continue baking, uncovered, for another 20-30 minutes, basting occasionally, until tender.
  11. Let rest for 10 minutes before serving.
