How to Make Tex Mex Burgers

  1. Preheat your broiler. Place poblano peppers directly on a foil-lined baking sheet. Broil for 12-15 minutes, turning halfway through, until the skins are blackened and blistered.
  2. Remove peppers from broiler and place in a bowl, cover tightly with plastic wrap, and let steam for 5 minutes. This will make peeling easier.
  3. While peppers steam, gently mix ground beef with chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
  4. Once the peppers have cooled slightly, peel, remove seeds and stems, and slice into strips.
  5. Shape the beef mixture into 4 equal-sized patties.
  6. Broil patties for 6-7 minutes per side, or until cooked to your desired doneness. During the last minute of cooking, top each patty with a slice of cheese.
  7. Remove burgers from broiler and let stand for a minute to allow the cheese to melt completely.
  8. Serve immediately on hamburger buns. Top with the roasted poblano pepper strips and salsa.
