How to Make Spicy Salsa
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add 1 medium onion, chopped, and 1 bell pepper (any color), chopped. Cook until softened, about 5-7 minutes.
- Add 4 cloves of minced garlic and cook for 1 minute more.
- Stir in 5 pounds ripe garden tomatoes, roughly chopped; 1 jalapeño pepper, seeded and minced (or more, to taste); 1/2 cup chopped cilantro; 2 tablespoons lime juice; 1 teaspoon salt; and 1/2 teaspoon black pepper.
- Bring to a simmer and cook for 15-20 minutes, or until the salsa has thickened slightly and some of the liquid has reduced.
- Taste and adjust seasoning as needed, adding more lime juice, salt, pepper, or jalapeño to your liking.
- For canning: Ladle the hot salsa into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 15 minutes to seal. Let cool completely before checking seals.
- For immediate enjoyment: Refrigerate in an airtight container and consume within the week.
