How to Make Spicy Salsa

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add 1 medium onion, chopped, and 1 bell pepper (any color), chopped. Cook until softened, about 5-7 minutes.

  4. Bring to a simmer and cook for 15-20 minutes, or until the salsa has thickened slightly and some of the liquid has reduced.
  5. Taste and adjust seasoning as needed, adding more lime juice, salt, pepper, or jalapeño to your liking.
  6. For canning: Ladle the hot salsa into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 15 minutes to seal. Let cool completely before checking seals.
  7. For immediate enjoyment: Refrigerate in an airtight container and consume within the week.
