How to Make Tomato Sausage And Bean Pasta
- Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, remove sausages from casings (if desired) and brown in a large skillet over medium-high heat, about 8-10 minutes. Set aside.
- Slice sausages thinly.
- Add olive oil to the same skillet. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
- Add cannellini beans and rosemary; cook for 2 minutes, stirring until fragrant.
- Stir in crushed tomatoes, sugar, and cream (if using). Bring to a simmer and cook for 10 minutes, or until the sauce has slightly thickened.
- Add the cooked sausages to the sauce and simmer for another 5 minutes to heat through.
- Add the drained pasta to the sauce. Stir in a little of the reserved pasta water if needed to loosen the sauce.
- Toss to coat and serve immediately, garnished with fresh rosemary.
- Serve with crusty bread for dipping, if desired.
