- Lime Jell O Gelatin
- Boiling Water
- 7 Up Soda
- 1 (20 oz) can crushed pineapple

- 1 (15 oz) container cottage cheese

- 1 large egg
- 8 oz Cool Whip

How to Make 7 Up Salad
- Dissolve 3 oz. (3 packets) of Jell-O in 1 cup of boiling water.
- Stir in 1 cup of 7 Up and let cool until slightly thickened (about 30 minutes).
- Gently fold in 1 (20 oz) can crushed pineapple, reserving ½ cup of the juice.
- Add 1 (10 oz) package miniature marshmallows and 1 (15 oz) container of cottage cheese.
- Pour the mixture into a greased 13x9 inch baking dish.
- Refrigerate for at least 2 hours, or until the base is set.
- Prepare the topping: In a saucepan, whisk together ¼ cup sugar and 2 tablespoons cornstarch.
- Gradually whisk in ½ cup reserved pineapple juice and 1 large egg, beating constantly.
- Cook over medium heat, stirring constantly, until the mixture thickens (about 5-7 minutes).
- Remove from heat and let cool completely.
- Once cooled, gently fold in 8 oz. Cool Whip and ½ cup chopped nuts (such as pecans or walnuts).
- Spread the topping evenly over the set Jell-O mixture.
- Refrigerate for at least 2 hours before serving to allow flavors to meld and the topping to set.
