How to Make Acapulco Tuna Dish
- Saute 1 medium onion, chopped, in 2 tablespoons olive oil over medium heat until translucent (about 5 minutes).
- In a large bowl, gently combine 2 (5 ounce) cans tuna (drained), the sauteed onions, 1 (14.5 ounce) can diced tomatoes (undrained), 1 teaspoon chili powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 large eggs, and 1/2 cup milk. Mix until well combined.
- Place half of 1 (10 ounce) bag of tortilla chips in the bottom of a 2-quart baking dish. Top with half of 1 cup shredded cheddar cheese, then half of the tuna mixture. Repeat layers.
- Spread 1/2 cup sour cream evenly over the top layer. Bake in a preheated 350°F (175°C) oven for 25-30 minutes, or until heated through and bubbly.
- Garnish with fresh parsley and sliced olives before serving.
