- 4 large eggs
- Vegetable Shortening
- Onion
- 1 cup chopped celery
- 1 cup chopped carrots
- Garlic Cloves
- Cooked Rice
- Ground Ginger
- 2 tablespoons soy sauce
How to Make Ali S Fried Rice
- Scramble 4 large eggs in a wok or large skillet over medium heat. Remove and set aside.
- Add 1 tablespoon of shortening (vegetable oil or other cooking oil) to the hot wok. Add 1 medium onion, chopped.
- Sauté onions until softened to your liking (about 5-7 minutes).
- Add 1 cup chopped celery and 1 cup chopped carrots to the wok.
- Sauté for 10 minutes, stirring frequently.
- Add 2 cloves minced garlic and sauté for another 4-5 minutes.
- Add 2 tablespoons of shortening to the wok and add 2 cups (or 3 cups for extra rice) of cold cooked rice.
- Cook for 15 minutes, stirring every 3-4 minutes, until heated through and slightly crispy.
- In a small bowl, whisk together 1 tablespoon grated fresh ginger and 2 tablespoons soy sauce. Pour over the rice and stir to combine.
- Add the scrambled eggs to the rice.
- Cook, stirring constantly, for another 5 minutes, or until heated through and flavors have melded.
- Serve immediately. Makes 4 servings.
