How to Make Allegheny Applesauce Bread
- Preheat oven to 350°F (175°C). Grease a 5x9 inch loaf pan.
- In a large mixing bowl, cream together 1/2 cup (1 stick) softened unsalted butter and 1/2 cup honey until light and fluffy.
- Beat in 2 large eggs, 1 cup unsweetened applesauce, and 1 teaspoon maple extract until well combined.
- In a separate bowl, whisk together 2 1/2cupsallpurpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/2 teaspoon salt.
- Stir in 1 cup raisins.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour batter into the prepared loaf pan and bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 30 minutes before transferring it to a wire rack to cool completely.
- Once cooled, wrap the bread tightly in plastic wrap and chill overnight in the refrigerator to allow the flavors to meld. This step is highly recommended!
- Slice and serve. This bread freezes well – double the recipe and enjoy fresh bread for weeks!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
