How to Make Alligator Sausage Crawfish Casserole
- Preheat oven to 350°F (175°C).
- In a large bowl, combine 1 lb alligator sausage (removed from casings), 1 lb crawfish tails, 1 cup cooked rice, 1 (10.75 ounce) can condensed cream of mushroom soup, 1/2 cup milk, 1/4 cup chopped green onions, 1/4 cup shredded cheddar cheese, 1 tablespoon Cajun seasoning, and 1/2 teaspoon black pepper. Mix thoroughly.
- Pour mixture into a greased 9x13 inch baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove foil and stir gently. Sprinkle with additional 1/4 cup shredded cheddar cheese.
- Continue baking, uncovered, for another 15 minutes, or until heated through and bubbly.
