How to Make Amazing Beef Stew

  1. In a large ziploc bag, combine 2 tablespoons all-purpose flour, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  2. Heat 2 tablespoons olive oil over medium heat in a large Dutch oven or soup pot.
  3. Add 2 lbs beef stew meat to the bag with the flour mixture. Seal and shake well until the beef is evenly coated.
  4. Remove the beef from the bag, shaking off excess flour. Add the beef to the hot oil and brown on all sides, working in batches if necessary. Remove the browned beef and set aside.
  5. Add 1 tablespoon flour and 1 large onion (finely chopped) to the pot. Stir until well browned and fragrant.
  6. Add 4 cups beef broth, 1 (14.5 ounce) can diced tomatoes (undrained), 1 teaspoon dried thyme, 1/2 teaspoon dried rosemary, 1 bay leaf, and 1 teaspoon Worcestershire sauce to the pot.
  7. Return the browned beef to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, stirring every 15 minutes.
  8. Add 2 lbs potatoes (peeled and cubed) and continue to cook for 1 additional hour, covered and stirring every 15 minutes.
  9. Stir in 1 (10 ounce) can frozen peas. Cover and cook for an additional 30-60 minutes, or until the peas are tender and the stew has thickened to your liking, stirring every 15 minutes.
  10. Remove the bay leaf before serving. Enjoy!
