- Preheat oven to 350°F (175°C).
- Drain 1 (16-ounce) jar of sauerkraut, reserving the liquid. Replace the sauerkraut liquid with 1 cup of pineapple juice from a can.
- Gently simmer the sauerkraut and pineapple juice in a saucepan over medium heat for 15 minutes, stirring occasionally.

- Drain any excess liquid from the simmered sauerkraut (if any). Combine the sauerkraut mixture with the onion mixture, 1 cup of drained pineapple chunks, and 1 medium bell pepper (chopped).
- Spread 4 ounces of cream cheese on thin slices of 8 ounces of deli ham. Place a spoonful of the sauerkraut mixture onto each ham slice and roll up tightly.
- Grease a baking dish (approximately 8x8 inches) with 1 tablespoon of butter. Place any remaining sauerkraut mixture in the bottom of the dish. Sprinkle 1/2 cup of shredded cheese over the sauerkraut.
- Arrange the ham rolls on top of the sauerkraut and cheese.
- Combine the remaining 1/2 cup shredded cheese with 1/2 cup breadcrumbs. Sprinkle this mixture over the ham rolls. Dot with a few small pieces of butter.
- Bake for 30-40 minutes, or until the ham rolls are heated through and the topping is golden brown. Serve immediately with mashed potatoes.
