Ingredients for Apple And Date Mousse
- 2 medium apples (about 1 pound), peeled, cored, and chopped
- 2 tablespoons lemon juice (freshly squeezed is best)
- Lemon Zest
- 2 tablespoons maple syrup
- 1 cup pitted Medjool dates
- 1 tablespoon sesame seeds
- Lemon Balm
How to Make Apple And Date Mousse
- In a medium saucepan, combine chopped apples, lemon juice, lemon zest, and maple syrup.
- Cook over medium heat, stirring occasionally, until apples are very soft (about 10-15 minutes). Add 1-2 tablespoons of water if the mixture becomes too dry.
- Remove from heat and let the apple mixture cool completely.
- Once cooled, add the pitted Medjool dates to a blender or food processor. Blend until smooth.
- Add the cooled apple mixture to the blender and blend until light and fluffy (this may take a few minutes).
- Stir in the sesame seeds.
- Spoon the mousse into 4 dessert glasses or small bowls.
- Refrigerate for at least 30 minutes to chill before serving.
- Garnish with fresh lemon balm, mint, or lemon geranium leaves before serving.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
