- In a resealable plastic bag, combine pork chops (4, about 1-inch thick), 1/4 cup apple cider vinegar, 1 tablespoon extra-virgin olive oil, 1 tablespoon grated fresh ginger, 2 cloves minced garlic, 1 tablespoon lemon juice, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Marinate for at least 30 minutes (longer is better!).
- Preheat oven to 350°F (175°C).
- Heat 1 tablespoon extra-virgin olive oil in a large oven-safe skillet over medium-high heat until almost smoking. Add pork chops, shaking off excess marinade.
