- Drain the apple mixture, reserving 1/4 cup of the liquid.
- In a medium bowl, combine the cooked apple and raisin mixture with 1/2 cup chopped walnuts and 1/2 cup breadcrumbs.
- In a small bowl, whisk together 2 tablespoons brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon lemon juice, and 1 teaspoon ground ginger.
- Add the wet ingredients to the breadcrumb mixture, tossing gently to combine.
- Cut 4 (1-inch thick) pork chops lengthwise, almost to the bone, creating a pocket in each chop.
- Spoon about 1/3 cup of the stuffing mixture into each pocket.
- Secure the pockets with toothpicks if needed.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the pork chops on both sides for 2-3 minutes per side.
- Transfer the pork chops to a 13x9x2-inch baking pan.
