How to Make Asian Edamame Fried Rice

  1. Whisk 2 large eggs and 2 egg whites with a pinch of salt and pepper.
  2. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the egg mixture and scramble until cooked through. Remove from pan and set aside.
  3. Add 1 tablespoon of oil to the wok. Add 1/2 cup chopped onion, 2 chopped scallions (separate whites and greens), 1/2 cup chopped carrots, and 2 cloves minced garlic. Stir-fry for 30-60 seconds until fragrant.
