  • 2 tablespoons soy sauce

  • 1 cup chopped tomatoes
  • Pita Bread

How to Make Asian Tofu Pitas

  1. Spray a large skillet with cooking spray and heat over medium-high heat.
  2. Add 1/2 medium onion (thinly sliced), 1 bell pepper (thinly sliced), and 2 cloves garlic (minced) to the skillet. Cook for 2-3 minutes, stirring occasionally, until softened.
  3. Add 1 block (14 oz) extra-firm tofu (crumbled or cubed), 2 tablespoons soy sauce, and 1/4 teaspoon black pepper to the skillet. Stir to combine.
  4. Cook for another 3-4 minutes, stirring occasionally, until the tofu is heated through and slightly browned.
  5. Remove the skillet from the heat and let cool slightly.
  6. Gently stir in 1 cup chopped tomatoes and 1 cup baby spinach. The spinach will wilt from the residual heat.
  7. Stuff each pita half generously with the tofu and vegetable mixture.
