How to Make Asian Tofu Pitas
- Spray a large skillet with cooking spray and heat over medium-high heat.
- Add 1/2 medium onion (thinly sliced), 1 bell pepper (thinly sliced), and 2 cloves garlic (minced) to the skillet. Cook for 2-3 minutes, stirring occasionally, until softened.
- Add 1 block (14 oz) extra-firm tofu (crumbled or cubed), 2 tablespoons soy sauce, and 1/4 teaspoon black pepper to the skillet. Stir to combine.
- Cook for another 3-4 minutes, stirring occasionally, until the tofu is heated through and slightly browned.
- Remove the skillet from the heat and let cool slightly.
- Gently stir in 1 cup chopped tomatoes and 1 cup baby spinach. The spinach will wilt from the residual heat.
- Stuff each pita half generously with the tofu and vegetable mixture.
- Serve immediately and enjoy!
