- 2 asparagus spears per rollup

How to Make Asparagus Rollups
- Snap off the tough ends of 1 pound asparagus spears. Use a vegetable peeler to remove any tough scales from the stalks, if desired.
- Steam the asparagus in a steamer basket over boiling water for 4-6 minutes, or until crisp-tender.
- Remove asparagus from steamer and let cool completely on paper towels.
- In a medium bowl, combine 4 ounces cream cheese, 1/4 cup crumbled blue cheese (or to taste), 1 tablespoon mayonnaise, and 1 teaspoon Dijon mustard. Mix until smooth.
- Roll out 12 slices of white bread using a rolling pin to flatten slightly.
