  • 2 asparagus spears per rollup

How to Make Asparagus Rollups

  1. Snap off the tough ends of 1 pound asparagus spears. Use a vegetable peeler to remove any tough scales from the stalks, if desired.
  2. Steam the asparagus in a steamer basket over boiling water for 4-6 minutes, or until crisp-tender.
  3. Remove asparagus from steamer and let cool completely on paper towels.
  4. In a medium bowl, combine 4 ounces cream cheese, 1/4 cup crumbled blue cheese (or to taste), 1 tablespoon mayonnaise, and 1 teaspoon Dijon mustard. Mix until smooth.
  5. Roll out 12 slices of white bread using a rolling pin to flatten slightly.
  6. Spread 2 tablespoons of the cream cheese mixture on one side of each bread slice.
  7. Top each bread slice with 1 thin slice of cooked ham (approx. 2 ounces total).
  8. Place 2 asparagus spears on top of the ham on each bread slice.
