How to Make Aunt Bee S Lentil Soup
- Heat 2 tablespoons of olive oil in a large stockpot over medium heat. Add 1 diced onion and 2 minced carrots; cook until softened, about 5 minutes.
- Stir in 1 cup brown or green lentils, 4 cups vegetable broth, 1 teaspoon dried thyme, 1/2 teaspoon dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
