How to Make Auntie S Vegetable Casserole

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine 2 medium carrots (chopped), 2 celery stalks (chopped), 1 medium onion (chopped), 1 (14.5 ounce) can of diced tomatoes, undrained, 1 cup frozen corn, 1 cup frozen peas, 1 cup cooked green beans, 1 teaspoon dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Pour the vegetable mixture into a greased 9x13 inch casserole dish.
