How to Make Aussie Bites
- Preheat oven to 350°F (175°C). Line a mini-muffin tin with paper liners or grease well.
- In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup packed light brown sugar, 1 cup granulated sugar, and 1 teaspoon ground cinnamon.
- In a separate bowl, melt 1 cup (2 sticks) unsalted butter and 1/2 cup honey in the microwave or on the stovetop. Stir until smooth and well combined. (Consider reducing butter to 1/2 cup for a lighter version).
- In a small bowl, dissolve 1 teaspoon baking soda in 2 tablespoons hot water.
- Add the dissolved baking soda to the melted butter and honey mixture. Stir well.
- Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix.
- Fill each mini-muffin cup about ¾ full. Slightly flatten the tops with a spatula or spoon.
- Bake for 10-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Let the Aussie Bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
