How to Make Awesome Pierogi Casserole

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, combine 2 lbs Yukon Gold potatoes, peeled and quartered, with enough water to cover. Bring to a boil over high heat and cook until tender (about 15-20 minutes).
  3. Drain potatoes and return them to the pot. Add 1 cup milk and 6 tablespoons (3 ounces) butter. Mash until smooth and creamy. Set aside.
  4. In a large skillet, melt the remaining 2 tablespoons (1 ounce) butter over medium-high heat. Add 6 slices bacon, diced, 1 medium onion, chopped, and 2 cloves garlic, minced. Cook for 5-10 minutes, or until bacon is crispy and onions are softened.
  5. Cook 9 ounces lasagna noodles according to package directions. Rinse under cold water to cool and set aside.
  6. In a 9x13 inch baking dish, spread half of the mashed potatoes. Top with 1/3 of 2 cups shredded cheddar cheese and a layer of lasagna noodles.
  7. Repeat layers with remaining mashed potatoes, another 1/3 of the cheese, and a layer of noodles.
  8. Spread the cooked bacon, onion, and garlic mixture over the noodles. Top with the remaining noodles and the last 1/3 of the cheese.
  9. Season generously with salt and pepper to taste.
  10. Bake uncovered at 350°F (175°C) for 30-45 minutes, or until cheese is melted, bubbly, and golden brown.
  11. Serve immediately with a dollop of sour cream and chopped fresh chives.
