How to Make Awesome Pierogi Casserole

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, combine 2 lbs Yukon Gold potatoes, peeled and quartered, with enough water to cover. Bring to a boil over high heat and cook until tender (about 15-20 minutes).
  3. Drain potatoes and return them to the pot. Add 1 cup milk and 6 tablespoons (3 ounces) butter. Mash until smooth and creamy. Set aside.
  4. In a large skillet, melt the remaining 2 tablespoons (1 ounce) butter over medium-high heat. Add 6 slices bacon, diced, 1 medium onion, chopped, and 2 cloves garlic, minced. Cook for 5-10 minutes, or until bacon is crispy and onions are softened.
