How to Make Awesomesauce Goulash

  1. Bring a large pot of salted water to a boil. Cook 1 pound of pasta according to package directions. Drain and set aside.
  2. In a Dutch oven or large, heavy-bottomed pot, brown 1 pound of Italian sausage (removed from casings) and 1 medium onion (chopped) over medium heat.
  3. Add 2 cloves of minced garlic and cook for 1-2 minutes more until fragrant.
  4. Remove sausage from pot and set aside, covering with foil to keep warm.
  5. Deglaze the pot with 1/2 cup of dry red wine, scraping up any browned bits from the bottom.
  6. Add 1 tablespoon of olive oil, 1 green bell pepper (chopped), 1 medium zucchini (chopped), and 2 stalks of celery (chopped).
  7. Cook until vegetables are softened, about 5-7 minutes.
  8. Stir in 28 ounces (2 large cans) of crushed tomatoes, 1 (15 ounce) can of corn, drained, 1 (15 ounce) can of tomato sauce, the cooked sausage, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/2 teaspoon of dried oregano, 1/4 teaspoon of red pepper flakes (optional), and salt and pepper to taste.
  9. Bring to a simmer, cover, and cook for 15 minutes.
  10. Stir in 4 ounces of shredded cheddar cheese and let simmer for another 15 minutes, or until cheese is melted and sauce has thickened.
