How to Make Bacon Green Onion And Cheddar Biscuits Emeril Lagasse

  1. Preheat oven to 475°F (246°C). Whisk together self-rising flour, cake flour, baking powder, baking soda, sugar, and salt in a large bowl.
  2. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Stir in the crumbled bacon, cheddar cheese, and green onions.
  4. Gradually add the heavy cream, mixing gently with a fork or your hands just until the dough comes together. Do not overmix.
  5. Melt 2 tablespoons of butter and brush the inside of a well-greased cast-iron biscuit pan or muffin tin.
  6. Fill each well about 2/3 full with the biscuit dough.
  7. Gently smooth the tops of the biscuits with the back of a spoon or your fingers.
  8. Brush the tops of the biscuits with the remaining 1 tablespoon of melted butter.
  9. Bake for 10-12 minutes, or until the biscuits are golden brown and cooked through.
  10. Let cool in the pan for a few minutes before inverting onto a wire rack to cool completely.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
