How to Make Bacon Mac N Cheese

  1. Preheat oven to 350°F (175°C).
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. While pasta cooks, melt butter in a large saucepan over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  4. In a separate skillet, cook bacon until crispy. Remove bacon, reserving 2 tablespoons of bacon grease. Set bacon aside.
  5. Add reserved bacon grease to the onions in the saucepan. Whisk in flour and cook for 1 minute, stirring constantly.
  6. Gradually whisk in milk until smooth and thickened. Bring to a simmer.
  7. Reduce heat to low. Stir in all the shredded cheeses until melted and smooth.
  8. Stir in cooked pasta and crispy bacon. Season with salt and pepper to taste.
  9. Pour mac and cheese into a greased 9x13 inch baking dish.
  10. Bake for 15-20 minutes, or until golden brown and bubbly.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
