How to Make Bacon Wrapped Chicken Breasts With Gorgonzola Walnut Stuffing
- Preheat oven to 350°F (175°C). Position oven rack 6 inches from the top.
- In a medium bowl, mash together 4 ounces crumbled Gorgonzola cheese, 1/2 cup chopped walnuts, 1/4 cup breadcrumbs, and 1 teaspoon fresh sage. Season generously with black pepper.
- Shape the mixture into 4 equal-sized logs.
- Cut a deep pocket into the thickest side of each of 4 boneless, skinless chicken breasts (about 6 ounces each).
- Season chicken breasts generously with salt and pepper.
- Stuff each chicken breast with a cheese log.
- Place a bacon slice (about 4 slices total) on a flat surface. Arrange a chicken breast, smooth side up, on top of the bacon. Wrap bacon around chicken in a spiral, tucking in the ends. Secure with toothpicks if needed.
- Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat.
- Place chicken breasts, smooth sides up, in the skillet. Cook until undersides are nicely browned, about 2 minutes per side.
- Carefully turn chicken breasts and brown the other side.
- Drain excess fat from the skillet.
- Loosely cover the skillet with aluminum foil.
- Bake for 20 minutes.
- Remove foil and broil for 2-3 minutes, or until bacon is crisp and golden brown. Watch closely to prevent burning.
- Let rest for 5 minutes before serving. Enjoy!
