  1. Preheat oven to 350°F (175°C). Position oven rack 6 inches from the top.
  2. In a medium bowl, mash together 4 ounces crumbled Gorgonzola cheese, 1/2 cup chopped walnuts, 1/4 cup breadcrumbs, and 1 teaspoon fresh sage. Season generously with black pepper.
  3. Shape the mixture into 4 equal-sized logs.
  4. Cut a deep pocket into the thickest side of each of 4 boneless, skinless chicken breasts (about 6 ounces each).
  5. Season chicken breasts generously with salt and pepper.
