Ingredients for Baconfredo
- 4 slices bacon, chopped
- Yellow Onion
- 1/4 cup butter
- 1 1/2 cups heavy cream
- Parmesan Cheese
- Cayenne Pepper
- Sea Salt
- Pasta
How to Make Baconfredo
- Chop 4 slices of bacon into small pieces. Fry over medium-high heat for 3-4 minutes, or until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon grease in the pan.
- Add 1/2 cup chopped onion to the pan with the bacon grease. Cook for 3-5 minutes, or until softened and translucent. Add a pinch of salt and pepper.
- Add 1/4 cup butter to the pan and melt completely.
- Pour in 1 1/2 cups heavy cream and a pinch of cayenne pepper (or more, to taste). Stir constantly.
- Bring to a simmer, then reduce heat to low. Add 1 1/2 cups grated Parmesan cheese and stir until smooth and melted. Stir in the cooked bacon.
- Toss immediately with 1 pound of hot cooked pasta (fettuccine or other long pasta recommended). Serve immediately, garnished with extra Parmesan cheese and bacon crumbles if desired.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
