  • 4 slices bacon, chopped
  • Yellow Onion
  • 1/4 cup butter
  • 1 1/2 cups heavy cream
  • Parmesan Cheese
  • Cayenne Pepper
  • Sea Salt
  • Pasta

How to Make Baconfredo

  1. Chop 4 slices of bacon into small pieces. Fry over medium-high heat for 3-4 minutes, or until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon grease in the pan.
  2. Add 1/2 cup chopped onion to the pan with the bacon grease. Cook for 3-5 minutes, or until softened and translucent. Add a pinch of salt and pepper.
  3. Add 1/4 cup butter to the pan and melt completely.
  4. Pour in 1 1/2 cups heavy cream and a pinch of cayenne pepper (or more, to taste). Stir constantly.
  5. Bring to a simmer, then reduce heat to low. Add 1 1/2 cups grated Parmesan cheese and stir until smooth and melted. Stir in the cooked bacon.
  6. Toss immediately with 1 pound of hot cooked pasta (fettuccine or other long pasta recommended). Serve immediately, garnished with extra Parmesan cheese and bacon crumbles if desired.
