  • Boneless Skinless Chicken Breast Halves
  • Dry White Wine
  • Orzo Pasta

  • 1/2 cup water

How to Make Baked Chicken And Garlic Orzo

  1. Preheat oven to 350°F (175°C).
  2. Spray a large (12-inch) nonstick skillet with cooking spray.
  3. Heat over high heat until hot.
  4. Add 2 lbs boneless, skinless chicken breasts.
  5. Brown chicken for 1-2 minutes per side, until lightly browned. Set aside.
  6. Reduce heat to medium-high. Add 1/2 cup dry white wine to the skillet.
  7. Stir with a flat spatula, scraping up any browned bits from the bottom of the pan. Cook for 30 seconds, or until slightly reduced. Set aside.
  8. Spray a 9x13 inch baking pan with nonstick cooking spray.
  9. In the baking pan, combine 1 cup orzo pasta, 1/2 cup chopped yellow onion, 4 cloves minced garlic, 1/4 cup chopped fresh parsley, 1 teaspoon dried oregano, 1 1/2 cups chicken broth, 1/2 cup water, and the wine mixture from the skillet.
  10. Stir to combine.
  11. Place the browned chicken breasts on top of the orzo mixture.
  12. Sprinkle lightly with 1 teaspoon paprika and 1/2 teaspoon lemon pepper.
  13. Bake, uncovered, for 60-70 minutes, or until the chicken is cooked through and the orzo is tender.
  14. Remove the chicken from the baking pan and set aside.
  15. Stir in 1/2 teaspoon salt and 2 tablespoons olive oil into the orzo mixture.
  16. Place the chicken back on top of the orzo.
  17. Serve immediately.
