  • Boiling Water
  • Chicken Bouillon Cube
  • 2 scallions
  • 1 tablespoon fresh ginger

  • 1 tablespoon rice wine vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water + 1 cup boiling water

How to Make Baked Fish In Soy Ginger Sauce

  1. Preheat oven to 425°F (220°C).
  2. Place fish fillets (about 1 pound) in a 13 x 9 inch baking dish.
  3. Dissolve 1 low-sodium chicken bouillon cube in 1 cup of boiling water. Set aside.
  4. Clean 2 scallions and cut each in half lengthwise.
  5. Slice the green portions thinly and set aside. Cut the white portions into matchstick-size pieces and set aside.
  6. Slice 1 tablespoon of fresh ginger into matchstick-size pieces.
  7. Pour 1/4 cup of the bouillon mixture over the fish fillets.
  8. Sprinkle the fillets with a pinch of cayenne pepper, salt, and black pepper (to taste).
  9. Top the fish with the sliced green scallions.
  10. Cover the baking dish and bake for 15 minutes, or until the fish flakes easily with a fork.
  11. While the fish bakes, whisk together the remaining 3/4 cup bouillon mixture, 2 tablespoons low-sodium soy sauce, 1 tablespoon rice wine vinegar, 1 teaspoon cornstarch, and 2 tablespoons water in a small bowl. Set aside.
