How to Make Baked Omelets

  1. Preheat oven to 350°F (175°C).
  2. Spray two 8-inch round cake pans with cooking spray or grease well.
  3. Place pans in the preheated oven for 5 minutes to heat.
  4. In a large bowl, beat egg whites and 3/4 teaspoon of the salt with an electric mixer until stiff peaks form. Do not overbeat!
  5. In a separate bowl, whisk together egg yolks, remaining 1/4 teaspoon salt, pepper, onion, flour, and Italian seasoning until smooth and thick.
  6. Gently fold the egg yolk mixture into the egg whites until just combined.
  7. Divide the mixture evenly between the hot cake pans.
  8. Bake for 15-20 minutes, or until a knife inserted into the center comes out clean.
  9. Let the omelets cool slightly in the pans before running a knife around the edges to loosen.
  10. Invert the omelets onto serving plates.
  11. Cut into wedges and cover with foil to keep warm while you prepare the topping.
  12. To make the tomato topping: Heat olive oil in a skillet over medium-high heat. Add the diced tomatoes, tomato paste, sugar, and oregano. Cook, stirring frequently, for 4-10 minutes, or until slightly thickened.
  13. In a separate skillet, heat 1/2 teaspoon of oil over low heat. Add 2-3 tablespoons of the tomato topping per serving and heat through. Stir in your choice of cooked vegetables and/or meats.
  14. Spoon the tomato mixture over the omelet wedges. Sprinkle with cheese and serve immediately.
