Ingredients for Banana And Maple Muffins

  • Whole Wheat Flour
  • Quick Oats
  • Baking Powder
  • 1/2 teaspoon salt
  • Ground Coriander
  • Walnuts
  • 3 ripe bananas, mashed
  • Egg
  • Canola Oil
  • 1/2 cup pure maple syrup
  • Maple Flavored Butter
  • 1/2 cup walnut halves, for garnish

How to Make Banana And Maple Muffins

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, mash the bananas. Add the sugar, eggs, oil, maple syrup, and vanilla extract. Mix well.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Fold in half of the walnut halves.
  6. Fill each muffin cup about 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. While muffins are cooling, prepare the glaze by melting the maple butter in a small saucepan over low heat.
  10. Once the muffins are cool, drizzle the maple butter glaze over the tops.
  11. Garnish with remaining walnut halves and serve.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
