How to Make Banana Mango Apple Rice Kugel

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch casserole dish.
  2. In a large bowl, combine 2 cups cooked rice, 2 ripe bananas (mashed), 1 cup diced mango, 1 cup diced apple, 1 cup milk (dairy or non-dairy), 1/2 cup brown sugar, 1/4 cup melted butter, 2 large eggs, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and a pinch of salt.
