How to Make Banana Nut Chip Muffins

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, cream together 1/2 cup (1 stick) softened butter and 1 cup granulated sugar until light and fluffy.
  3. Add 2 large eggs one at a time, beating well after each addition.
  4. Mash 2 ripe bananas and beat them into the butter-sugar-egg mixture until smooth.
  5. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with 1/2 cup milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  7. Stir in 1/2 cup chopped walnuts or pecans, 1/2 cup mini chocolate chips, and 1 teaspoon vanilla extract.
  8. Fill muffin cups about 2/3 full.
  9. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  11. Serve warm and enjoy!
