How to Make Barbara's Lean Lasagna

  1. Preheat oven to 350°F (175°C).
  2. Lightly coat two large baking sheets with cooking spray or line with parchment paper.
  3. Arrange zucchini slices in a single layer on the prepared baking sheets.
  4. Roast for 15-20 minutes, or until slightly softened.
  5. Increase oven temperature to 400°F (200°C).
  6. While zucchini roasts, brown 1 lb ground beef or turkey in a large non-stick skillet over medium-high heat, breaking it up with a spoon.
  7. Add 1 medium onion, chopped, to the skillet during the last few minutes of cooking the meat.
  8. Drain off excess grease.
