Ingredients for Barbecued Chicken Pasta

- 1 cup barbecue sauce
- 1 cup shredded provolone cheese (optional)
- 1 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions (optional)

How to Make Barbecued Chicken Pasta
- Cook 1 pound pasta according to package directions. Reserve 1/4 cup of pasta water before draining.
- Return the drained pasta to the pot and cover to keep warm.
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes, and sauté, stirring occasionally, until browned on all sides (3-5 minutes).
- Add 1 medium bell pepper (any color), chopped, 1/2 medium onion, chopped, and 2 cloves garlic, minced. Cook until the pepper is bright green (1-3 minutes).
- Stir in 1 cup barbecue sauce and 1/2 cup spaghetti sauce. Bring to a simmer.
- Remove from heat.
- Add the chicken and sauce mixture to the warm pasta.
- Stir in 1 cup shredded mozzarella cheese (and 1 cup provolone cheese, if desired).
- Stir over low heat until the pasta is coated with the sauce, adding reserved pasta water 1 tablespoon at a time if needed to thin the sauce.
- Garnish with 2 tablespoons chopped green onions and 2 tablespoons chopped cilantro (optional).
- Serve immediately and enjoy!
