How to Make Barbecued Jerk Chicken
- Combine all ingredients except the chicken in a food processor. Process until completely smooth.
- Using a sharp knife, make 4 parallel, ½-inch deep cuts in each chicken breast. Place the chicken breasts in a shallow dish.
- Pour the marinade over the chicken, ensuring it gets into the cuts. Use your hands to thoroughly coat the chicken.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to fully penetrate.
- Preheat your grill to medium heat. Grill the chicken for 15-20 minutes, turning occasionally and basting with any remaining marinade, until the internal temperature reaches 165°F (74°C) and the juices run clear.
