How to Make Basil And Cheese Torta

  1. Preheat oven to 350°F (175°C). Grease 6 or 10 (6 or 10 oz) custard cups.
  2. In a large bowl, combine ricotta cheese, Parmesan cheese, eggs, basil, garlic powder, salt, and pepper. Mix until well combined.
  3. Spoon the mixture evenly into the prepared custard cups, filling each about ¾ full.
  4. Place the custard cups in a larger baking pan. Pour enough hot water into the baking pan to come halfway up the sides of the custard cups (this creates a water bath for even cooking).
  5. Bake for 45-60 minutes, or until the center is set and the edges are lightly golden brown. A toothpick inserted into the center should come out clean.
  6. Let the tortas cool completely in the cups before removing. Once cool, cover and freeze for up to 3 months.
  7. To reheat from frozen: remove from freezer 30 min before reheating. Bake at 350°F (175°C) for 20-25 minutes, or until heated through. Alternatively, microwave individually until heated.
