  1. Boil 2 lbs potatoes until tender. Drain and mash with 4 tbsp butter and 1 tsp salt.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 1 large onion, chopped, and cook until softened, about 5 minutes.

  4. Drain off any excess grease from the beef mixture.
  5. Butter a 1-quart casserole dish.
  6. Spread half of the mashed potatoes evenly in the bottom of the casserole dish.
  7. Top with the beef mixture.
  8. Cover the beef with the remaining mashed potatoes, smoothing the surface.
  9. Whisk 1 large egg and brush it over the top of the potatoes.
  10. Sprinkle 1/2 cup grated cheese (cheddar or Gruyere recommended) over the egg wash.
  11. Bake in a preheated 350°F (175°C) oven for 30-35 minutes, or until the top is golden brown and bubbly.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
