How to Make Beef N Noodle Casserole
- Brown 1 lb ground beef with 2 cloves minced garlic in a large skillet over medium-high heat for approximately 10 minutes. Set aside in a large bowl.
- Spray the skillet with cooking spray. Add 1 medium onion, chopped, and 8 oz sliced mushrooms. Cook until softened and beginning to brown, about 10 minutes.
- Stir in 1 (14.5 oz) can diced tomatoes, undrained, 1 medium zucchini, chopped, 1 (15 oz) can tomato sauce, and 1 cup frozen corn kernels.
- Add 1 tsp dried oregano, 1/2 tsp dried basil, 1/4 tsp red pepper flakes, and 1-2 jalapeños, minced (adjust to taste).
- Add the browned beef to the skillet and mix well to combine all ingredients.
- Meanwhile, cook 8 oz ramen noodles according to package directions. Drain and add to the beef mixture.
