- In a bowl, combine 1/4 cup all-purpose flour, 1 teaspoon salt, and 1/2 teaspoon black pepper. Dredge 2 lbs beef stew cubes in the flour mixture, ensuring they're evenly coated.
- Cook 6 slices bacon in a large skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons bacon grease.
- Discard excess bacon grease, reserving 2 tablespoons as noted above.
- In a measuring cup, combine 12 ounces dark beer (stout or porter recommended), 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme, 1/2 teaspoon dried rosemary, and 1/4 teaspoon black pepper.
- Place the floured beef cubes, cooked bacon, 4 cloves minced garlic, and 1 large chopped onion in your slow cooker.
- Pour the beer mixture over the beef and vegetables.
- Cook on low for 10 hours or on high for 6 hours, or until beef is fork-tender. If desired, stir in 2 cups chopped carrots and 2 cups chopped potatoes during the last 2 hours of cooking.
- Before serving, taste and adjust seasoning if needed. Garnish with fresh parsley if desired.
