How to Make Beef Stifado

  1. Season 2 lbs beef stew meat generously with salt and pepper.
  2. Place 2 tablespoons butter in the bottom of a large (6-quart or larger) slow cooker.
  3. Add the seasoned beef and turn to coat with butter.
  4. Arrange 2 large onions, thinly sliced, over the meat.
  5. In a small bowl, whisk together 2 tablespoons tomato paste with 4 cloves minced garlic. Pour this mixture evenly over the meat and onions. Do not stir.
  6. Add 2 bay leaves, 1 cinnamon stick, 1 teaspoon ground cloves, 1/2 cup red wine (optional), and 1/2 cup raisins to the slow cooker. Do not stir.
  7. Cover and cook on low for 8-10 hours, or until the beef is incredibly tender.
  8. At serving time, remove the bay leaves, cinnamon stick, and cloves.
  9. Gently stir the stifado to blend the flavors. Serve hot over white or brown rice.
