  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • Beef Bouillon Granules
  • 1/4 cup chopped green onions
  • Diced Green Chilies
  • Four Cheese Mexican Blend Cheese

How to Make Beef Taco Noodle Bake

  1. Brown 1 lb ground beef and 1 medium onion (chopped) in a large skillet over medium-high heat. Drain off any excess grease.
  2. Stir in 1 (28 ounce) can of tomato sauce, 1 cup of water, and 1 packet of taco seasoning. Bring to a simmer and cook for 10 minutes.
  3. In a large bowl, combine 16 ounces of cottage cheese, 1/2 cup sour cream, 1/4 cup all-purpose flour, and 1 beef bouillon cube (crumbled).
  4. Add 8 ounces cooked egg noodles (or other pasta), 1/4 cup chopped green onions, and 1 (4 ounce) can of diced green chilies (drained) to the cottage cheese mixture. Stir until well combined.
  5. Grease a 13x9 inch baking dish. Spread half of the noodle mixture evenly in the dish.
  6. Top with the beef mixture, spreading evenly.
  7. Spread the remaining noodle mixture over the beef.
  8. Top evenly with 2 cups shredded cheddar cheese (or your favorite Mexican blend).
  9. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until heated through and bubbly.
  10. Let stand for 5-10 minutes before serving.
  11. Serve with a tossed salad and cornbread for a complete meal. Serves 6.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
