- 1 pound fresh beets
- Water for washing

How to Make Beets
- Preheat your oven to 400°F (200°C).
- Wash and scrub 1 pound of beets thoroughly. Trim off the stems and root ends.
- Lightly oil a baking sheet. Arrange the beets on the baking sheet.
- Drizzle 2 tablespoons of olive oil over the beets. Sprinkle with 1 tablespoon of honey, 1 teaspoon of dried thyme, and a pinch of salt and pepper.
- Roast for 45-60 minutes, or until a fork easily pierces the beets. Smaller beets will cook faster.
- Remove from the oven and let cool slightly. Once cool enough to handle, peel the beets under cold running water.
- Dice the beets into bite-sized pieces (or leave whole, depending on preference). Serve warm or cold.
