Indulge in this perfectly portioned Berry Cobbler for Two! Adapted from my new "Small Batch Baking" cookbook, this recipe uses just 7oz ramekins for individual servings, eliminating leftover dessert woes. I used frozen raspberries (because who doesn't have a bag in the freezer?), but feel free to substitute any frozen berries you love. Adjust the sugar to your liking depending on the tartness of your berries. Easily doubled or tripled for sharing (or future indulgence!). Get ready for a warm, comforting treat in under an hour!

  • 1/4 cup granulated sugar
  • All Purpose Flour
  • Fresh Lemon Juice
  • 1/4 cup packed light brown sugar

How to Make Berry Cobbler For Two

  1. Preheat oven to 375°F (190°C).
  2. Grease two 7-ounce ramekins.
  3. Berry Filling: In a medium bowl, gently combine 1 cup frozen berries, 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1 tablespoon all-purpose flour. Divide evenly between the prepared ramekins.
  4. Cobbler Topping: In a separate bowl, whisk together 1/4 cup all-purpose flour, 1/4 cup packed light brown sugar, a pinch of salt.
  5. Cut 2 tablespoons cold unsalted butter into small pieces and add to the flour mixture. Using your fingers, rub the butter into the flour until the mixture resembles coarse crumbs.
  6. Stir in 1/4 cup rolled oats and 1 tablespoon chopped nuts (optional).
  7. Evenly sprinkle the topping over the berries in each ramekin. Gently press down to adhere.
  8. Place the ramekins on a baking sheet for stability.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let cool for 15 minutes before serving.
  11. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
